Easter Brunch


I hope everyone had a lovely Easter, spent with family and friends and amazing food (especially chocolate). This past week, a good friend and I went to New York to celebrate our graduation, and we also got to celebrate Easter in the city. We had brunch with my friend's cousin and their good friends and it was a very delicious occasion. IMG_1039

Our host was kind enough to hard boil some eggs for us to decorate, so that proved to be both fun and hilarious.


Normally brunch is a difficult meal to accommodate with food allergies, and I was so appreciate of our host and my friend's cousin for finding options for me to be able to eat and enjoy myself along with everyone else.


My friend's cousin made a layered yogurt dish with greek yogurt, fresh strawberries and blackberries, and lemon zest garnished with cilantro. A very quick and easy dish to make, but also one that works well as a side dish.


The main dish was a base of cubed sweet potato, yam and potatoes and spices, with chorizo sausage and gorganzola cheese, with eggs cracked on top, then baked in the oven. With my allergy, the egg topping didn't work, but the base was completely safe, so my portion was put in a small dish and baked alongside the main dish in the oven. I think that was a great option to allow for everyone to enjoy the same meal with only slight modifications.


Dessert was a lemon coffee cake, which looked like it came straight out of a dessert cookbook. Though I couldn't have the cake, it was just as good to look at.


With the sun shining in through the high windows, it was hard to imagine a nicer place to spend a morning, with great company and delicious food. And how gorgeous are those place settings?
