SuperBowl Nachos

SuperBowl Nachos

I feel like it isn't a proper SuperBowl Sunday experience if there isn't a whole lot of junk food involved. Though I live in Canada, my Dad is a huge NFL and football fan, so the SuperBowl has always been a big event in my house. I also live a few hours drive from Seattle, and born and raised a Seahawks fan, so the Seahawks win was well received. My parents went off to a SuperBowl party, so it was just my sister and I making our own party food last night. I went with the customary nachos, seeing as there was only two of us, I didn't think the crock pot of chili, veggie tray, chicken wings, seven layer dip and various other greasy, delicious food were necessary. Nachos are something that you can completely tailor to your own tastes (example, I don't like raw onions, so these nachos are onionless) and you can also make as much or as little as you want. For this recipe, you'll need:

  • 1 small green pepper
  • 1 tomato
  • 1/4 cup black olives
  • 2 cups aged cheddar cheese
  • 1/2 cup parmesan cheese
  • 300 g lean ground beef
  • 1/2 bag tortilla chips

1. In a large saucepan over medium high heat, break up your ground beef and cook until well done.

2. Meanwhile, chop veggies to desired size and grate cheese.

3. Begin assembling your nachos. I find the trick to getting the most ingredients on every chip is to make two thin layers of nachos stacked on top of each other. I will put the tortilla chips on the pan first, then all the toppings and cheese. Then lay another layer of tortilla chips on top, and layer on the rest of the toppings and cheese. This way, everything melts together really nicely, and gives more of an even spread of the ingredients.

4. Bake at 350 degrees Fahrenheit for about 10 minutes, until the cheese has all melted and some of the tortilla chips have browned around the edges.

5. Serve with avocado, sour cream and salsa. Enjoy!
